Two years ago I planted
a passion fruit vine
to eventually grow and cover and shade my fish pond.
This vine amazes me because it is only two
years old,
yet it is producing heaps of fruit and the structure of the vine is so strong with
gnarled stalks and branches and fruit hanging from every branch, it is really a
beautiful sight.
fruit before,
but the beautiful aspect of this vine is the purple and white petal flowers and
shiny green leaves.
Also, these attractive flowers are a magnet for butterflies and bees
which helps to get a bumper crop.
I sliced the tough outer
rind of one of the fruit and tasted the sweet tangy pulp inside.
Not too bad at all … and I’m converted to this heavenly taste.
My question is what can
I do with the rest?
Besides giving them to family and friends,
are there suggestions to ripen green fruit quickly, cooking recipes, or ways to
store them for a while.
